Easy Beef Stew

Beef stew can really be a welcome meal when it is cold outside.  Making a quick stew can be made easily using fresh and frozen vegetables and steak cut into 1 inch cubes.  Using tender beef, makes cooking time a little faster than normal.  This recipe makes about 4 (1 cup) servings and takes about 30 minutes in preparation times.

 

Ingredients:
1 lb. Boneless sirloin steak cut into 1-in. cubes 2 Carrots (or a handful of smaller ones)
1 T   Vegetable oil (divided)  1 stalk chopped celery
1/2  Medium onion chopped 1 C+  unsalted beef stock (can or box)
1 lg. Potato chopped in small chunks Season to taste (seasoned salt, black pepper and thyme)
1 1/2 C. Frozen veggies (peas, corn and green beans)     

  Brown beef cubes in oil in large skillet or Dutch oven in medium, high heat.  Add uncooked vegetables and beef stock, allow stock to come to a slow boil, cover and simmer for 10 minutes.  Add frozen vegetables and seasoning.  Bring mixture to boil, reduce heat, cover and simmer for and additional 10 - 15 minutes until vegetables are tender. 

Hint:  Serve hot with roll or thick bread slices.
