Beef stew can really be a welcome meal when it is cold outside. Making a quick stew can be made easily using fresh and frozen vegetables and steak cut into 1 inch cubes. Using tender beef, makes cooking time a little faster than normal. This recipe makes about 4 (1 cup) servings and takes about 30 minutes in preparation times.
|1 lb. Boneless sirloin steak cut into 1-in. cubes||2 Carrots (or a handful of smaller ones)|
|1 T Vegetable oil (divided)||1 stalk chopped celery|
|1/2 Medium onion chopped||1 C+ unsalted beef stock (can or box)|
|1 lg. Potato chopped in small chunks||Season to taste (seasoned salt, black pepper and thyme)|
|1 1/2 C. Frozen veggies (peas, corn and green beans)|
Brown beef cubes in oil in large skillet or Dutch oven in medium, high heat. Add uncooked vegetables and beef stock, allow stock to come to a slow boil, cover and simmer for 10 minutes. Add frozen vegetables and seasoning. Bring mixture to boil, reduce heat, cover and simmer for and additional 10 - 15 minutes until vegetables are tender.
Hint: Serve hot with roll or thick bread slices.
